  • Sesame seed buns. These provide awesome texture and extra of that sesame flavor that works so well to compliment the other ingredients in this dish.
  • Ground pork. You could use also ground chicken, beef or turkey but I really enjoy the slightly sweet taste of pork. I think it pairs nicely with the tangy Asian barbecue sauce.
  • Sesame-ginger dressing. There are a number of bottled dressing that will work great with this recipe. I like PF Chang's Creamy Sesame Dressing but you can go with Newman's Own, Yo Mama's or another brand if you prefer.
  • Ketchup. This blends with the sesame dressing transforming it into a barbecue-style, tomato-based sauce!
  • Sriracha sauce. This layers into the sauce adding subtle heat and additional flavor. You can add more or less to turn the heat up or down.
  • Garlic. I like to use garlic paste. It's easy. You just squeeze it right out of the tube into the pot (I just eyeball it!). But if you prefer, you can use minced garlic, garlic powder or fresh garlic.
  • Toasted sesame seeds. These get added to both the pork and the cucumber salad. I personally love sesame seeds for their flavor as well as texture so I love this all three layers of this dish have sesame seeds. It's subtle but adds a nice texture to an otherwise very saucy dish.
  • Cucumber, green onions and sesame seeds combine with more of the sesame dressing to form a quick cucumber salad that is good enough to eat by itself but also makes the perfect topping for this sandwich.

Ingredients

  • 2 green onions (scallions) divided
  • 1 cucumber peeled and sliced
  • 2 tablespoon toasted sesame seeds divided
  • 1 lbs ground pork (16oz)
  • 1 tablespoon garlic paste
  • 1 cup ginger-sesame dressing, divided
  • ½ cup ketchup
  • 2 tablespoon Sriracha sauce (more or less to taste)
  • 4 sesame seed hamburger buns toasted

Instructions

  • Wash and slice green onions, separating whites from greens.

  • Peel and slice cucumber then set aside in a bowl with ¼ cup of the ginger-sesame dressing, 1 tablespoon sesame seed and the scallion greens. (Toss cucumbers to coat in dressing)

  • Heat a large skillet over medium-high heat. Add pork, scallion whites, and garlic paste. Stir until browned, about 4-6 minutes.

  • Add ginger-sesame dressing, ketchup, Sriracha, and remaining sesame seeds to pork; cook for an additional 2 minutes.*

  • Season with salt and pepper as desired. Reduce heat to simmer to keep warm.

  • Using a slotted spoon, open and stuff toasted sesame seed buns with ground pork then layer on several slices of cucumber.
