For women, that's nearly double the recommended daily allowance (source:Mayo Clinic). Want even more Vitamin C? Consider adding vitamin-rich papaya, guava, kiwi, more orange juice (or orange segments), a few fresh kale leaves, or even a few sprigs of parsley.

Ugh, you too? We've got this weird low-grade cold making the rounds in our house. Annoyingly stuffy noses but thankfully, I suppose, not much else. Hope you feel better soon. And I'm so excited to be a part of this with you, too!

Kare, this looks so delicious. As you say - indulgent and healthy. Love it. Banana smoothies are my favourite - but loving the idea of coconut and pineapple for extra flavour (and vitamins!).

Thanks, Skye! Aren't bananas just the best thing ever (especially frozen)?

Hi Christy, nice to meet you, too! If you have a Trader Joe's near you, I recommend their light coconut milk in a can. It's so good, and priced well, too.

Looks delicious, and helpful as my husband is just getting over the flu. Also, he was a meat-eater when we got together 10 years ago. Now we are both vegetarians!

Hi - I would love to try smoothies but can't do bananas. Why are bananas (it seems) in all smoothies? What can be substituted? Thanks for your help!
Reply
Kare @ Kitchen Treaty says
Hi Debbie, oh man, that's rough - bananas are definitely a key ingredient for tons of smoothies (as you've noticed!), they add wonderful creaminess and sweetness, and when they're frozen you don't need to add ice. For this recipe, maybe you can puree the coconut milk and pineapple together then freeze into ice cubes? Put them in the blender and add the orange juice; blend. Maybe add a little honey or other sweetener if needed. If you eat dairy, a little yogurt can help thicken smoothies nicely, too. Hope that helps!

Like so many, I too am fighting a cold so this smoothie looks like just the thing to help. Will probably throw in a scoop of pea protein powder (I use Growing Naturals plant based protein powders) as I'm also trying to increase my protein intake. Looking forward to a week of new smoothie recipes! Thanks!

Love love love this! What a dream to see Oh My Veggies and Kitchen Treaty combining to make magic in the kitch. Coconut is pretty much my favorite thing ever (besides hummus, of course) so I'll definitely be whipping this up once the weather warms up a bit!

Sounds delicious! Where in the grocery store do you find coconut milk- for this smoothie? I've seen it in cans, in cartons and I *think* in the dairy section- could you specify what you use for this? Thanks so much! Can't wait to try it!
Reply
Kare Troughton says
Hi Jennifer, I use canned light coconut milk. It depends on the store - I usually buy it at Trader Joe's, and it's in the same aisle as most all of their other canned goods. You can generally also find it in the ethnic section of most grocery stores. Yes, you can also buy coconut milk in the carton in most dairy sections, but I find it doesn't have quite the rich, coconutty flavor as canned - still good, though! Hope that helps!

Hi Kare,
Thanks for the recipe. Can't wait to try it. However, would it have the same outcome, just a different taste using Almond milk rather than coconut milk?
Thanks! 🙂

Kare Troughton says
It might be a tad thinner and wouldn't have the coconutty taste, but I think it would be plenty good! Personally I would maybe increase the banana and the pineapple a tad if going that route. I love almond milk in smoothies! 🙂
