This super easy Crockpot BBQ ribs recipe makes such flavorful and tender ribs you may never fire up the grill again! A Crockpot may not be the first thing to come to mind when you think of barbecue, especially ribs.

But the same “low and slow” method applies here to make fall-off-the-bone ribs that taste like you spent the day tending to them. The trick to tender but not mushy, easy Crockpot BBQ ribs are the potatoes!

The potatoes serve 2 purposes: they help support the ribs in an upright position so you avoid them drowning in their own sauce. They also make a perfect side!

When it comes to making ribs, the best tip you will ever get is to go with a dry rub. Other meats require a liquid marinating process, but ribs are very different.

The flavor from the meat is enough to carry any meal with a side of a good sauce, but a dry rub using things like coarse salt, smoked paprika, and garlic powder will work wonders for your ribs.

There are a few other things that need to be added to this dry rub, but when it’s all said and done, you will never go back.

Combine the dry rub ingredients in a medium bowl. Rub to cover both sides of the ribs. You can save any leftover rub in an airtight container.

Heat a large skillet or grill pan and quickly sear both sides of the ribs for about 2-3 minutes per side until the rub forms a light crust.

Place the potatoes in the bottom of the Crockpot. Line the ribs along the outside of the Crockpot around the potatoes.

Pour your bottle of barbeque sauce over the ribs in the Crockpot. Be sure to pour sauce down both sides.

Cook on low for 8-10 hours.

Once the Crockpot is done, place the ribs and potatoes onto a cooking sheet. Brush the ribs and potatoes with some of the sauce from the Crockpot.

Set the oven to broil and place the ribs and potatoes in the oven for 3-5 minutes until the sauce is nicely caramelized. I like to use the few minutes to reheat any veggie sides I am serving, too!

Ingredients

  • 1 tbs coarse salt
  • 1/2 tbs pepper or to taste
  • 1 tbs smoked paprika
  • 1 tbs garlic powder
  • 1 tbs onion powder
  • 1 tbs cocoa powder
  • 1/4 cup light brown sugar
  • 2 lbs baby back ribs
  • 4-5 potatoes medium sized
  • 1 bottle BBQ sauce pick your favorite
